How to Choose Ginger
Fresh ginger (aka gingerroot) should have smooth skin (wrinkled skin indicates that the root is old), be plump and hard, and have a spicy scent. -
How to Store Ginger
Store unpeeled fresh ginger, tightly wrapped, in the refrigerator for up to 3 weeks; or freeze it, tightly wrapped, for up to 6 months. Ground or dried ginger can be stored in a cool, dry, dark place for up to 2 years.
How to Prepare Ginger
Use a vegetable peeler to remove the skin from however large a section of the root you need.
