How to Choose Currants
Currants come in three colors: red, white, and black. Acidic and musky black currants are typically used for preserves or syrups. Red and white berries are slightly less acerbic. Pick plump, hull-free specimens. -
How to Store Currants
Refrigerate in a tightly covered container for up to 4 days.

Remove them from their stems and wash just before using. -
How to Use Currants
Although traditionally made into jams, syrups, and preserves, currants can also be added to pan sauces for pork chops and other meats or used as a tart salad garnish. Try serving red and white berries topped with sugar and cream as a simple summer dessert.
