How to Choose Blueberries
The tastiest blueberries are a deep purplish blue with a silvery frost (known as a “bloom”) and taut, smooth skin. Look for those that are evenly blue (no green peeking through). Avoid pints that contain berries that are shriveled or moldy or that are still green (those are unripe).
How to Store Blueberries
Pick through the berries and discard damaged or moldy ones. Keep blueberries, unwashed, in a shallow container in the refrigerator for up to 5 days. Rinse just before using. Blueberries have a fairly short season, but you can buy fresh berries and stick them in the freezer for year-round baking (see How to Freeze Blueberries).
How to Use Blueberries
To reduce the amount of color streaking, gently fold blueberries (unthawed, if frozen) into your cake or muffin batter at the last minute. For prettier pancakes, add the berries as soon as the batter has been poured instead of mixing them into the batter.
