    Avocados ripen best after they’re picked. Select those that give with slight pressure for immediate use. Look for fruits that are without blemishes and heavy for their size. The creamy Hass variety is best for guacamole; others are firmer and better for salads.

    To ripen, set avocados in a paper bag (add an apple to quicken the process) at room temperature for up to 4 days. When ripe, they can be refrigerated for several days.
