Mozzarella, Roasted Red Peppers, and Pesto on Focaccia

Snag the focaccia from the nearest bakery, the pesto and peppers (in a jar) from the grocery store. Add a bottle of Chianti, and mangia.


Feta, Sun-Dried Tomatoes, and Olive Tapenade in a Pita

For a mini Mediterranean escape, have the grilled pita tonight, then use up the leftover Feta, tomatoes, and bottled tapenade in a Greek salad tomorrow.


Muenster, Avocado, and Sprouts on Sourdough

Even though it is all good for you, this silky-textured sandwich with subtle flavors and the tang of sourdough might just end up being your go-to grilled cheese for rainy nights.
