Yellow Tomato Salsa

Ingredients

  • 1 1/2 pounds yellow tomatoes, cut into quarters
  • 1/2 cup red onion
  • 1/4 cup torn basil leaves
  • 1/2 teaspoon kosher salt

Directions

  1. Pulse tomatoes in a food processor until roughly chopped.
  2. Transfer to a bowl and mix in onion, basil leaves, and salt.
  3. Serve with hearts of romaine, sliced zucchini, and crackers.
