Combine the carrots, oil, lemon juice, and ¼ teaspoon pepper in a medium bowl.

  7. Check 6 ounces sliced ham or roasted turkey (or a mix of both)
  8. Check 4 ounces sliced provolone
  9. Check 1 tomato, sliced
  10. Check 1 cucumber, thinly sliced
  11. Check 1 bunch arugula
  12. Check 4 soft whole-grain rolls, halved
