Ingredients

  1. Check 1/4cup olive oil
  2. Check 3tablespoons fresh lime juice
  3. Check 1/2teaspoon ground cumin
  4. Check kosher salt and black pepper
  5. Check 2 medium carrots, grated (about 1 cup)
  6. Check 4ounces green beans (about 1⁄4 pound), sliced crosswise
  7. Check 4 scallions, sliced
  8. Check 1 head romaine lettuce, torn into pieces
  9. Check 3/4pound sliced roasted deli turkey
  10. Check 4ounces Manchego cheese, sliced

Directions

  1. In a medium bowl, whisk together the oil, lime juice, cumin, ½ teaspoon salt, and ¼ teaspoon pepper.
  2. Add the carrots, green beans, and scallions and toss to coat.
  3. Divide the lettuce, turkey, and cheese among bowls and top with the carrot mixture.
