Ingredients
- 2 pounds ground turkey
- 1 medium onion, quartered
- 2 garlic cloves
- 2 carrots, finely grated (3/4 cup)
- 2 tablespoons tomato paste
- 1 tablespoon Dijon mustard
- kosher salt
- freshly ground pepper
- 1/4 pound mozzerella, sliced

- sliced tomatoes
- 2 tablespoons olive oil

Directions
- Place the onion and garlic in a food processor; run until finely chopped (but not liquefied). In a large bowl, combine the ground turkey with the onion mixture, grated carrots, tomato paste, Dijon mustard, 1/4 teaspoon kosher salt, and 1/8 teaspoon freshly ground black pepper.
- Form into 4 patties, each 3/4 inch thick. Place on a medium-hot grill and cook 5 minutes per side. Or to cook on the stovetop, heat 2 tablespoons olive oil in a grill pan over medium heat. Place the burgers in the pan and cook 7 to 8 minutes; flip and cook 5 minutes more.

Quick Tip

Free-range birds have a more robust turkey flavor and substantial texture than coop-raised ones. They tend to be moist but
not exceptionally so.

FRESH PICK
Cranberries
High in vitamin C, these hard, tart berries are grown in bogs in colder regions of North America and Europe. They’re almost
always eaten cooked, as in the classic Thanksgiving relish.
