Ingredients

  1. Check 3/4cup long-grain white rice
  2. Check 2tablespoons canola oil
  3. Check 1/2pound ground turkey
  4. Check 1tablespoon chopped garlic
  5. Check 1tablespoon chopped ginger
  6. Check 4 scallions, sliced
  7. Check 1cup frozen peas
  8. Check 1cup snow peas, halved
  9. Check 4 carrots, sliced
  10. Check 2tablespoons hoisin sauce
  11. Check 2tablespoons rice vinegar

Directions

  1. Cook the rice according to the package directions.
  2. Meanwhile, heat the oil in a large skillet over medium-high heat. Add the turkey, garlic, ginger, and half the scallions and cook, breaking up the meat with a spoon, until browned, 3 to 5 minutes.
  3. Add the rice, peas, snow peas, carrots, hoisin sauce, and vinegar to the turkey mixture and cook until heated through, 2 to 3 minutes. Top with the remaining scallions.
