Tortellini With Peas and Tarragon

Ingredients

  • 1 pound frozen cheese tortellini
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, finely chopped
  • 1 1/2 cups frozen peas
  • kosher salt and pepper
  • 2 tablespoons chopped fresh tarragon
  • 1/2 cup grated Parmesan

Directions

  1. Cook the tortellini according to the package directions.
  2. Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook until soft, about 6 minutes.
  3. Increase heat to medium-high. Add the butter and cook until it turns golden brown, about 3 minutes. Stir in the garlic, peas, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook until heated through, 2 to 3 minutes.
  4. Add the tortellini, tarragon, and half the Parmesan and toss. Divide among bowls and sprinkle with the remaining Parmesan.
