Ingredients

  1. Check 8ounces lo mein or other Asian noodles
  2. Check 1tablespoon canola oil
  3. Check 1pound flank steak, thinly sliced across the grain
  4. Check kosher salt and black pepper
  5. Check 1/2pound snow peas, halved lengthwise
  6. Check 2 medium carrots, thinly sliced
  7. Check 2 shallots, sliced
  8. Check 1/3cup red pepper jelly

Directions

  1. Cook the noodles according to the package directions.
  2. Meanwhile, heat the oil in a large skillet over medium-high heat. Season the beef with ½ teaspoon salt and ¼ teaspoon pepper.
  3. Cook the beef, stirring occasionally, until cooked through, 3 to 4 minutes. Transfer to a plate.
  4. Add the snow peas, carrots, and shallots to the skillet and cook, tossing, for 4 minutes.
  5. Return the steak to the skillet, add the jelly and cook, tossing, for 1 minute. Serve with the noodles and vegetables.
