Sweet-Potato Mash

Ingredients
- 3 large sweet potatoes, peeled and cut into 1-inch cubes (about 4 1/2 cups)
- 2 tablespoons unsalted butter
- 1/4 cup whole milk
Directions
- Place the sweet potatoes in a medium saucepan and add enough salted water to cover. Heat to boiling, cover, and cook for 10 minutes or until soft.
- Drain the potatoes and transfer them back to the saucepan. Add the butter and milk and mash.
