  1. In a food processor (or by hand), finely chop the parsley, garlic, and oregano. Transfer to a bowl. Add the oil, vinegar, salt, and pepper. Mix well.
  2. Heat broiler. Cut the steak into 4 portions. Place in a roasting pan or on a baking sheet in a single layer and rub both sides with the sauce.
  3. Broil steak, 3 to 4 minutes per side for medium. Remove and let rest, covered, for 5 minutes before serving.
  4. Serve steaks with raw onion rings.

Make it a meal: Serve the steak with upgraded coleslaw. Toss a 12-ounce package of broccoli slaw, 3 thinly sliced scallions, and ½ red onion, also thinly sliced, with ½ cup buttermilk, ¼ cup sour cream, 1 tablespoon Dijon mustard, ½ teaspoon salt, and ⅛ teaspoon pepper.
