Ingredients

  1. Check 3/4 cup apple cider vinegar
  2. Check 1/3 cup sugar
  3. Check 1 tablespoon pickling spice
  4. Check kosher salt
  5. Check 4 Persian or small cucumbers, quartered lengthwise
  6. Check 1/2 small white onion, thinly sliced

Directions

  1. Combine the vinegar, sugar, pickling spice, ¼ cup warm water, and a pinch of salt in a medium bowl. Add the cucumbers and onion and stir to combine.
  2. Refrigerate until the vegetables are infused with the flavor of the marinade, at least 3 hours and up to 2 days. Serve chilled or at room temperature.
