Ingredients

  1. Check 2tablespoons olive oil
  2. Check 2tablespoons fresh lemon juice
  3. Check 1tablespoon finely grated fresh ginger

  6. Check 1/2pound sugar snap peas, trimmed and thinly sliced
  7. Check 1/2 English cucumber, sliced
  8. Check 1 shallot, thinly sliced

Directions

  1. In a medium bowl, whisk together the oil, lemon juice, ginger, sugar, ½ teaspoon salt, and ¼ teaspoon pepper. Add the snap peas, cucumber, and shallot and toss to combine.
