Ingredients
- 1/2 cup mayonnaise
- 1 hard-boiled egg, finely chopped
- 2 small gherkins (small sweet pickles), minced
- 1 tablespoon chopped scallion or chives
- 12 cocktail-size pumpernickel slices
- 12 small pieces smoked salmon
Directions
- Make hard-boiled eggs.
- Combine the mayonnaise with the finely chopped hard-cooked egg, minced gherkins, and the chopped scallion or chives.
- Spread on the pumpernickel slices. Top each with a small piece of smoked salmon.
