Ingredients

  1. Check 1/2cup mayonnaise
  2. Check 1 hard-boiled egg, finely chopped
  3. Check 2 small gherkins (small sweet pickles), minced
  4. Check 1tablespoon chopped scallion or chives
  5. Check 12 cocktail-size pumpernickel slices
  6. Check 12 small pieces smoked salmon

Directions

  1. Make hard-boiled eggs.
  2. Combine the mayonnaise with the finely chopped hard-cooked egg, minced gherkins, and the chopped scallion or chives.
  3. Spread on the pumpernickel slices. Top each with a small piece of smoked salmon.
