Ingredients

  1. Check 3 medium tomatoes
  2. Check 6 cloves garlic
  3. Check 6 sprigs thyme
  4. Check 3tablespoons olive oil
  5. Check kosher salt and pepper

Directions

  1. Heat oven to 300° F.
  2. Slice the tomatoes in half and squeeze out the seeds.
  3. Place the tomatoes, cut-side up, in a small baking dish and scatter on the garlic and thyme. Drizzle with the oil and sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  4. Bake until the tomatoes are soft but still hold their shape, about 2 hours.
