Ingredients

  1. Check 1 8-ounce package soba noodles
  2. Check 1/4cup soy sauce
  3. Check 3tablespoons lime juice
  4. Check 2tablespoons light brown sugar
  5. Check 8cups canola oil
  6. Check 2cups all-purpose flour
  7. Check 2cups seltzer
  8. Check 1/4teaspoon baking soda
  9. Check 3/4pound peeled and deveined large shrimp
  10. Check 3cups broccoli florets
  11. Check 2 scallions, sliced

Directions

  1. Cook the soba noodles according to the package directions; rinse under cold water. In a small bowl, whisk together the soy sauce, lime juice, sugar, and ¼ cup water; set aside.
  2. Meanwhile, heat the oil in a large saucepan over medium heat until the temperature registers 360° F on a deep-fry thermometer.
  3. In a large bowl, whisk together the flour, seltzer, and baking soda. In batches, dip the shrimp and broccoli in the batter and fry in the oil until golden, 4 to 5 minutes.
  4. Serve the shrimp and broccoli on the noodles with the soy-lime dipping sauce. Top with the scallions.
