Ingredients

  1. Check 1 cup fresh corn kernels (from 2 ears)
  2. Check ¼ cup chopped poblano chile
  3. Check ¼ cup thinly sliced radishes (about 3 small radishes)
  4. Check 1 tablespoon fresh lime juice
  5. Check 1 pound ground round
  6. Check 3 cups sliced shiitake mushroom caps (about 6 oz.)
  7. Check teaspoons chopped garlic
  8. Check teaspoons kosher salt
  9. Check 8 (6-in.) flour tortillas
  10. Check fresh cilantro leaves
  11. Check hot sauce

Directions

  1. Stir together corn, poblano, radishes, and lime juice. Set aside.
  2. Cook ground round in a large nonstick skillet over medium-high, stirring occasionally, until browned, about 5 minutes. Stir in shiitakes, garlic, and salt; cook, stirring occasionally, until shiitakes are tender, about 5 minutes.
  3. Divide ground round mixture evenly among tortillas; top with corn mixture, cilantro, and hot sauce.
