- 1 1/2 cups sugar
- 2 large egg whites
- 1 tablespoon light corn syrup
- pinch fine salt
- Combine the sugar, egg whites, corn syrup, salt, and ⅓ cup water in a double boiler or large heatproof bowl set over (but not in) a pot of simmering water. Beat with a handheld mixer on high until glossy and tripled in volume, 7 minutes. Cool completely before using.
