Ingredients

  1. Check 1 1/2cups sugar
  2. Check 2 large egg whites
  3. Check 1tablespoon light corn syrup
  4. Check pinch fine salt

Directions

  1. Combine the sugar, egg whites, corn syrup, salt, and ⅓ cup water in a double boiler or large heatproof bowl set over (but not in) a pot of simmering water. Beat with a handheld mixer on high until glossy and tripled in volume, 7 minutes. Cool completely before using.
