Heat oven to 425° F. Toss the potatoes, oil, lime zest, and ½ teaspoon each salt and pepper on 2 rimmed baking sheets. Roast, tossing once, until golden brown, 15 to 18 minutes. Drizzle with the lime juice and sprinkle with the cilantro. Serve warm.

  1. Check 4 sweet potatoes (about 3 pounds), cut into thin wedges
  2. Check 2 tablespoons olive oil
  3. Check 1/2 teaspoon lime zest, plus 2 tablespoons lime juice
  4. Check kosher salt and black pepper
  5. Check 3 tablespoons chopped fresh cilantro leaves
