- 1/4 cup toasted walnuts, chopped
- 2 scallions, chopped
- 1 tablespoon olive oil
- kosher salt and black pepper
- 12 thick-cut potato chips
Directions
- In a small bowl, combine the roasted red peppers, walnuts, scallions, oil, ¼ teaspoon kosher salt, and ⅛ teaspoon black pepper.
- Spoon onto the potato chips.
