- 1¼ pounds radishes, halved
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 tablespoon fresh lime juice
- 1 tablespoon chopped fresh flat-leaf parsley
- 2 tablespoons chopped roasted, salted pistachios
- Preheat oven to 400°F. Toss together the radishes, olive oil, salt, and pepper. Bake until caramelized and tender, 20 to 25 minutes. Drizzle with the lime juice and toss with the parsley and pistachios.
