- 6 thin slices prosciutto, halved crosswise
- 1/2 cup canned white beans, rinsed
- 2 tablespoons chopped roasted red pepper
- 6 thinly sliced basil leaves
- 1 tablespoon olive oil
- Press 1 piece of prosciutto into each cup of a mini muffin tin, allowing some overhang. Bake at 375º F until crisp, 12 to 15 minutes.
- Toss the beans, red pepper, basil, and oil; season with salt and pepper and divide among the cups.
