Ingredients

  • 4 ounces grated Cheddar (1 cup)
  • 1/2 cup mayonnaise
  • 4 ounces cream cheese, at room temperature
  • 3 tablespoons sliced jarred pimientos
  • 2 tablespoons grated onion
  • kosher salt and black pepper
  • saltine crackers, for serving

Directions

  1. In a food processor, combine the Cheddar, mayonnaise, cream cheese, pimientos, and onion and puree until smooth. Season with ¼ teaspoon each salt and pepper. Serve with the saltines.
