Parmesan Cauliflower Tots

Tater tots are always a crowd-pleasing side, but they aren’t exactly the most nutritious option. For a healthier, even tastier alternative, try our cheesy cauliflower tots, which replace starchy potato with nutrient-dense cauliflower. To keep the tots crispy without deep-frying them, we sprinkle each one with a bit of Parmesan cheese, which creates an addictively crunchy outer shell. Flipping the tots halfway through their cook time also ensures that both sides bake to a nice golden brown. Serve them warm, alongside homemade chicken strips or veggie burgers.

Ingredients

  1. Check 3 cups cauliflower rice
  2. Check 1 large egg, beaten
  3. Check ½ cup diced onion (from 1/2 medium onion)
  4. Check ½ cup panko breadcrumbs
  5. Check ½ cup shredded Parmesan, plus more for sprinkling
  6. Check ¼ cup shredded mozzarella cheese
  7. Check 2 tablespoons chopped chives
  8. Check ½ teaspoon garlic powder
  9. Check kosher salt and black pepper

Directions

  1. Preheat the oven to 375° F. Line a rimmed baking sheet with parchment paper. In a large mixing bowl, combine the cauliflower rice, egg, onion, breadcrumbs, Parmesan, mozzarella, chives, and garlic powder. Season with a generous pinch of salt and several turns of freshly ground pepper, and stir until well mixed.
  2. Form the mixture into 36 tots and place on the prepared baking sheet, spacing them evenly. Sprinkle each tot with additional Parmesan cheese. Bake the tots until golden brown, about 18-20 minutes, flipping them halfway through cooking time.
