New Potatoes and Pesto

Ingredients

  • 1 1/2 pounds new potatoes
  • 1 teaspoon kosher salt
  • 1 cup store-bought pesto

Directions

  1. Place the potatoes in a medium pot, cover with cold water, and bring to a boil. Add 1 teaspoon kosher salt, reduce heat, and simmer until tender, 12 to 15 minutes. Drain and run under cold water to cool.
  2. Cut into quarters. Serve with pesto for dipping.
