In a large bowl, toss the lettuce, shrimp, cucumber, chickpeas, onion, Feta, olives, and pita chips with the oil, vinegar, and ¼ teaspoon each salt and pepper.

Ingredients

  1. Check 1/2 head Romaine lettuce, cut crosswise into thin strips (8 cups)
  2. Check 1 pound cooked peeled and deveined medium shrimp, cut in half crosswise
  3. Check 1/2 English cucumber, chopped
  4. Check 1 15.5-ounce can chickpeas, rinsed; or a heaping 1/2 cup dried chickpeas, soaked and cooked
  5. Check 1/2 medium sweet onion (such as Vidalia or Walla Walla), chopped
  6. Check 3/4 cup crumbled Feta (about 3 ounces)
  7. Check 1/2 cup pitted kalamata olives, halved
  8. Check 2 cups pita chips, broken into pieces
  9. Check 3 tablespoons olive oil
  10. Check 2 tablespoons red wine vinegar
  11. Check kosher salt and black pepper

Directions
