Ingredients

  1. Check 1/2 head Romaine lettuce, cut crosswise into thin strips (8 cups)
  2. Check 1pound cooked peeled and deveined medium shrimp, cut in half crosswise
  3. Check 1/2 English cucumber, chopped
  4. Check 1 15.5-ounce can chickpeas, rinsed; or a heaping 1/2 cup dried chickpeas, soaked and cooked
  5. Check 1/2 medium sweet onion (such as Vidalia or Walla Walla), chopped
  6. Check 3/4cup crumbled Feta (about 3 ounces)
  7. Check 1/2cup pitted kalamata olives, halved
  8. Check 2cups pita chips, broken into pieces
  9. Check 3tablespoons olive oil
  10. Check 2tablespoons red wine vinegar
  11. Check kosher salt and black pepper

Directions

  1. In a large bowl, toss the lettuce, shrimp, cucumber, chickpeas, onion, Feta, olives, and pita chips with the oil, vinegar, and ¼ teaspoon each salt and pepper.
