Meatballs With Apricot Couscous

Once the meatballs are cooked, there's very little work to do—just steam the couscous and apricots and mix in almonds and scallions.

Ingredients

Easy Meatballs

cup
couscous
1/2
cup
dried apricots, sliced
1/4
cup
sliced almonds
2
scallions, chopped
2
tablespoons
olive oil
kosher salt and black pepper
1/2
cup
plain yogurt
lemon wedges, for serving

Directions

  1. Cook the meatballs according to the recipe directions.
  2. Place the couscous and apricots in a bowl. Add 1 cup boiling water, cover, and let sit for 5 minutes. Fluff with a fork, then fold in the almonds, scallions, and oil; season with ¾ teaspoon salt and ½ teaspoon pepper. Serve with the meatballs, yogurt, and lemon wedges.
