Ingredients

  1. Check 20 Easy Meatballs
  2. Check 1cup couscous
  3. Check 1/2cup dried apricots, sliced
  4. Check 1/4cup sliced almonds
  5. Check 2 scallions, chopped
  6. Check 2tablespoons olive oil
  7. Check kosher salt and black pepper
  8. Check 1/2cup plain yogurt
  9. Check lemon wedges, for serving

Directions

  1. Cook the meatballs according to the recipe directions.
  2. Place the couscous and apricots in a bowl. Add 1 cup boiling water, cover, and let sit for 5 minutes. Fluff with a fork, then fold in the almonds, scallions, and oil; season with ¾ teaspoon salt and ½ teaspoon pepper. Serve with the meatballs, yogurt, and lemon wedges.
