Ingredients
- 2 1/2 pounds sweet potatoes, peeled and cut into 2-inch pieces
- 3 tablespoons maple syrup
- 1/3 cup low-fat milk
- 2 tablespoons unsalted butter
- 1 teaspoon kosher salt
Directions
- Place the potatoes in a large pot, cover with lightly salted water, and bring to a boil. Simmer, covered, until tender, about 15 minutes. Drain.
- Add the maple syrup, milk, butter, and salt and mash to desired consistency.
