Ingredients

  1. Check 2 1/2pounds sweet potatoes, peeled and cut into 2-inch pieces
  2. Check 3tablespoons maple syrup
  3. Check 1/3cup low-fat milk
  4. Check 2tablespoons unsalted butter
  5. Check 1teaspoon kosher salt

Directions

  1. Place the potatoes in a large pot, cover with lightly salted water, and bring to a boil. Simmer, covered, until tender, about 15 minutes. Drain.
  2. Add the maple syrup, milk, butter, and salt and mash to desired consistency.
