Ingredients

  1. Check 1/2pound cooked peeled and deveined shrimp, chopped
  2. Check 1/2 mango, finely diced (about 1 cup)
  3. Check 2tablespoons chopped fresh cilantro
  4. Check 2tablespoons olive oil
  5. Check 1tablespoon fresh lime juice
  6. Check 2teaspoons grated fresh ginger
  7. Check kosher salt and black pepper
  8. Check 24 endive leaves (from about 3 heads)

Directions

  1. In a medium bowl, combine the shrimp, mango, cilantro, oil, lime juice, ginger, 1/4 teaspoon salt, and 1/8 teaspoon pepper.
  2. Spoon the shrimp mixture into the endive leaves.
