Ingredients

  1. Check 1/2 pound cooked peeled and deveined shrimp, chopped
  2. Check 1/2 mango, finely diced (about 1 cup)
  3. Check 2 tablespoons chopped fresh cilantro
  4. Check 2 tablespoons olive oil
  5. Check 1 tablespoon fresh lime juice
  6. Check 2 teaspoons grated fresh ginger
  7. Check kosher salt and black pepper
  8. Check 24 endive leaves (from about 3 heads)

Directions

  1. In a medium bowl, combine the shrimp, mango, cilantro, oil, lime juice, ginger, 1/4 teaspoon salt, and 1/8 teaspoon pepper.
  2. Spoon the shrimp mixture into the endive leaves.
