Ingredients

cooked peeled and deveined shrimp, chopped
1/2
mango, finely diced (about 1 cup)

chopped fresh cilantro

olive oil

tablespoon
fresh lime juice

teaspoons
grated fresh ginger
kosher salt and black pepper

endive leaves (from about 3 heads)

Directions

  1. In a medium bowl, combine the shrimp, mango, cilantro, oil, lime juice, ginger, 1/4 teaspoon salt, and 1/8 teaspoon pepper.
  2. Spoon the shrimp mixture into the endive leaves.
