- 3/4 pound green beans, trimmed
- 1 tablespoon fresh lime juice
- 1 tablespoon olive oil
- 1 teaspoon freshly grated ginger
- kosher salt
- freshly ground pepper
- Boil the green beans until crisp-tender, about 3 minutes. Drain and run under cold water. Toss the beans with the fresh lime juice, olive oil, and ginger. Season to taste with kosher salt and freshly ground pepper.
