Jalapeño-Cheese Quesadillas

  1. Heat broiler. Form 2 quesadillas by sandwiching the Cheddar and jalapeños between the 4 tortillas.
  2. Broil until the cheese has melted and the tortillas are crisp, 2 to 3 minutes per side. Cut into wedges.

Before you grate cheese, coat the grater with cooking spray. It will be easier to use and wash.
