Think vegetarian sandwiches are flavorless? Think again. Here, salty feta, crunchy cucumber, and cool mint liven up thick multigrain slices smeared with smooth hummus. Bright, creamy, and peppery, it's a combo that proves healthy doesn't have to mean ho-hum.


  1. Check 4 slices multigrain bread
  2. Check ½ cup hummus
  3. Check 1 small cucumber, thinly sliced
  4. Check ½ cup crumbled feta cheese
  5. Check ½ small red onion, sliced
  6. Check 6 sprigs mint, torn


  1. Spread 2 slices of bread with hummus. Layer on the cucumber, feta, onions, and mint. Top with remaining bread.
  2. Wrap sandwiches tightly with plastic film or wax paper if you are packing them, or serve immediately.
