Ingredients
- 1/2 Kirby cucumber, cut into thin strips
- 1/4 carrot, cut into thin strips
- 1/4 cup cilantro leaves
- 1/2 jalapeño pepper, seeded and sliced
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- kosher salt and black pepper
- 1 Portuguese sandwich roll, split
- 2 ounces thinly sliced ham
Directions
- In a small bowl, combine the cucumber, carrot, cilantro, jalapeño, lime juice, olive oil, and a pinch each salt and pepper.
- Form a sandwich with the roll, ham, and cucumber mixture.
