Ingredients

  1. Check 1/2 Kirby cucumber, cut into thin strips
  2. Check 1/4 carrot, cut into thin strips
  3. Check 1/4cup cilantro leaves
  4. Check 1/2 jalapeño pepper, seeded and sliced
  5. Check 1tablespoon lime juice
  6. Check 1tablespoon olive oil
  7. Check kosher salt and black pepper
  8. Check 1 Portuguese sandwich roll, split
  9. Check 2ounces thinly sliced ham

Directions

  1. In a small bowl, combine the cucumber, carrot, cilantro, jalapeño, lime juice, olive oil, and a pinch each salt and pepper.
  2. Form a sandwich with the roll, ham, and cucumber mixture.
