Ingredients

  1. Check 1 3-ounce boneless, skinless chicken breast

  3. Check 1 plum tomato, diced
  4. Check 1/4cup part-skim mozzarella, diced
  5. Check 1teaspoon balsamic vinegar

Directions

  1. Heat a grill or grill pan over medium-high heat.
  2. Season the chicken with the pepper and grill until cooked through, about 4 minutes per side.
  3. Meanwhile, combine the tomato, mozzarella, and vinegar in a bowl. Transfer to a plate and serve with the chicken.
