Goat Cheese Bruschetta

Ingredients

olive oil

fresh lemon juice

balsamic vinegar

teaspoon
honey
kosher salt and black pepper
1/2
small shallot, diced

tablespoon
chopped fresh herbs (such as dill, parsley, chives, and basil)

thick slices country bread, toasted

4-ounce packages soft goat cheese

Directions

  1. In a medium bowl, whisk together the oil, lemon juice, vinegar, honey, and ¼ teaspoon each salt and pepper. Stir in the shallot and herbs.
  2. Drizzle half the vinaigrette over the bread, spread with the goat cheese, and drizzle with the remaining vinaigrette.
