Ingredients

  1. Check 1/2cup peanut butter
  2. Check 3tablespoons rice vinegar
  3. Check 3tablespoons soy sauce
  4. Check 1tablespoon brown sugar
  5. Check 1teaspoon grated fresh ginger
  6. Check 8ounces spaghetti (1/2 box)
  7. Check 1 1/2cups shredded rotisserie chicken
  8. Check 1 red bell pepper, sliced
  9. Check 1/2 English cucumber, cut into strips
  10. Check 2 scallions, sliced
  11. Check 2tablespoons chopped unsalted roasted peanuts

Directions

  1. Cook the pasta according to the package directions; drain and return it to the pot.
  2. In a blender, combine 1 cup water with the peanut butter, rice vinegar, soy sauce, brown sugar, and ginger. Blend until smooth.
  3. Add the peanut mixture, chicken, bell pepper, cucumber, and scallions to the pasta pot and toss to combine. Serve sprinkled with the peanuts.
