Ingredients

  1. Check 2 plum tomatoes, seeded and diced
  2. Check 1 small yellow bell pepper, diced
  3. Check 1 Kirby cucumber, diced
  4. Check 1/2 red onion, diced
  5. Check 1tablespoon red wine vinegar
  6. Check 1tablespoon extra-virgin olive oil
  7. Check kosher salt and black pepper
  8. Check dippers (such as crostini and endive)

Directions

  1. In a medium bowl, combine the tomatoes, bell pepper, cucumber, onion, vinegar, oil, and 1/4 teaspoon each salt and pepper. Serve with the dippers.
