Ingredients

  • 2 tablespoons olive oil
  • 6 cloves garlic, sliced
  • 2 15-ounce cans pinto beans, rinsed
  • 1/2 teaspoon dried oregano
  • kosher salt and black pepper
  • 4 scallions, thinly sliced

Directions

  1. Heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring occasionally, until soft, 1 to 2 minutes.
  2. Add the beans, oregano, 1/2 cup water, 3/4 teaspoon salt, and 1/2 teaspoon pepper. Simmer, stirring occasionally, until the beans are heated through, about 4 minutes.
  3. Stir in the scallions and serve.

Quick Tip

Keep it to a simmer―boiling beans can burst their skins.
