James Baigrie
Serves 4 Hands-On Time: 10m Total Time: 2hr 10m

Ingredients

  • 3 cups fresh strawberries, hulled, plus extra unhulled berries for garnishing
  • 1 cup sugar
  • 2 3/4 cups heavy cream or half-and-half

Directions

  1. Cut any large strawberries in half. Place the berries in a single layer on a baking sheet and freeze for 2 hours.
  2. In a blender, combine the sugar and cream or half-and-half. Blend for about 20 seconds or until the sugar dissolves. Add the frozen berries and purée. Divide the mixture among 4 glasses and garnish with the whole berries. Serve immediately.

Quick Tip

While berries are in season―and relatively inexpensive―buy extra and freeze them in a resealable plastic bag to use during the winter.
