Egg Sandwich With Ham and Spinach

The slightly runny egg yolks will mingle with the bread, ham, and spinach and create an instant sauce as you eat this sandwich.

Ingredients

olive oil

large eggs

whole-grain English muffins, split and toasted

cup
baby spinach
2
slices deli ham
kosher salt and black pepper
hot sauce, for serving (optional)

Directions

  1. Heat the oil in a large nonstick skillet over medium heat, then fry the eggs to the desired doneness, 2 to 3 minutes for slightly runny yolks.
  2. Form 2 sandwiches with the English muffins, fried eggs, spinach, and ham. Season with ¼ teaspoon each salt and pepper. Serve with hot sauce, if desired.
