Make this quick take on nachos in the microwave to cut down on hands-on cooking time.

Ingredients

  1. Check 1/2 cup fat-free refried beans
  2. Check 1/2 teaspoon fresh lime juice
  3. Check 3 tablespoons mild salsa
  4. Check kosher salt
  5. Check 1/4 cup grated Monterey Jack
  6. Check 1/4 avocado, diced
  7. Check tortilla chips, for serving

Directions

  1. Mix together the beans, lime juice, 1 tablespoon of the salsa, and a pinch of salt.
  2. Top with the cheese. Microwave until the cheese is melted, 30 to 40 seconds. Top with the avocado and the remaining 2 tablespoons of salsa. Serve with tortilla chips.
