Ingredients

  1. Check 1/4cup mayonnaise
  2. Check 1tablespoon lemon juice
  3. Check 3/4teaspoon curry powder
  4. Check kosher salt and black pepper
  5. Check 1pound cooked, peeled, and deveined large shrimp, coarsely chopped
  6. Check 2 stalks celery, sliced
  7. Check 1cup chopped arugula
  8. Check hot dog buns, toasted
  9. Check potato chips (optional)

Directions

  1. In a medium bowl, whisk together the mayonnaise, lemon juice, curry powder, and ¼ teaspoon each salt and pepper.
  2. Add the shrimp, celery, and arugula and toss to combine.
  3. Serve on the buns with the potato chips (if desired).
