Ingredients
- 1 lemon, peeled, seeded, and roughly chopped
- 1/4 cup chopped fresh dill
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon kosher salt
- 2 small cucumbers, chopped
Directions
- Cut away the peel and white pith of the lemon with a knife and roughly chop.
- In a medium bowl, combine the lemon, dill, oil, salt, and cucumbers.
