- 1 cup couscous, cooked according to the package directions
- 4 ounces Feta, crumbled
- 1/2 cup chopped roasted red peppers
- 1/2 cup cup fresh mint leaves
- 1 tablespoon olive oil
- kosher salt and black pepper
- Let the couscous cool. Fold in the Feta, red peppers, mint, oil, salt, and pepper.
